Chef James Gaag of La Colombe in Cape Town embarked on an epic gastronomic adventure at Red Bull’s Hangar-7 Restaurant Ikarus in Austria, showcasing the rich diversity of South African flavours.
The Culinary Journey
James Gaag, after discovering his passion for cooking, worked in top South African restaurants and won cooking competitions. He joined La Colombe, rising to Sous Chef. In 2013, he worked under Raymond Blanc in England, then returned to La Colombe in 2014. Throughout March, Chef Gaag took the helm of this esteemed establishment, presenting a menu that was a symphony of flavours. From Bluefin Tuna “La Colombe” to Goose liver with Morels and Celery, every dish was carefully crafted to provide an unforgettable dining experience.
Inspiration and Representation
Chef Gaag’s residency was more than just a culinary showcase; it was an opportunity to inspire future chefs and put South African cuisine on the map. As the only chef from Africa chosen for this prestigious residency, he embraced the chance to represent his country and its unique culinary traditions.
When asked abot his initial reaction to recieving the invite the Chef said,
“To be included amongst the world’s most renowned chefs was unfathomable and I suppose in some ways, daunting.”

The dining experience at Hangar-7 was elevated by the stunning glass architecture and the historic aeroplanes of the Flying Bulls. Diners savoured every bite, leaving with memories that would last a lifetime. Chef Gaag and his team worked tirelessly behind the scenes to recreate the La Colombe experience in Salzburg, right down to the last detail.
